christopherferan said he usually ends the roast when it reaches about 0:45–0:55 of development time. source
Later Community Reassessment
In a later discussion, denis6004 said he no longer believed as much in that profile. He compared the resulting roasts to 100 g Roest slow power-up roasts: floral and pleasant-smelling for about 10 days, then beginning to stale. He also cautioned that small roasters may struggle to hold a steady slow roast, so he was unsure whether they are well suited to long or slow roasts. source
For evaluating these roasts over time, denis6004 described brewing immediately out of the roaster and then again around 5, 7, 10, and 14 days, with later checks as needed. source
